Met Another Filipina Neighbor

'Just came back from Nori's. She was the Filipina whom I met in Target. Today is her day off from work so she invited me to come over to her place. I was so happy because she introduced me to another Filipina who is also living in the same apartment complex where she is. The other lady's name is Del. She is from Cebu. I am so happy meeting Nori and Del. I will post a picture of us together later because I will be preparing dinner for my honey.

Sunday Chicken Barbecue

We had Chicken Barbecue at the house. We bought whole chicken cuts and seasoned them with barbecue seasoning, lemon juice, and Worcestershire sauce. Aside from its appetizing aroma, Worcestershire sauce adds good flavor in barbecues. My honey enjoyed grilling at the back porch while I was enjoying myself eating a piece in the kitchen (smiles). As you can see the the barbecue is kind of burnt. My honey likes it that way.

He's Home Now

At last, my honey's home now. He was told to work overtime for a project test Sunday afternoon. I thought it was like a 3-hour work since it is Sunday. Unexpectedly, it took them almost 10 hours working on that test. I called him to know about the progress and he said it is going to be done soon. (On situations like this, I think of the times when I was still working and I have to work on weekends and even Sundays. That was too much!)

Anyway, so I waited until my honey arrived home about 12:00 AM. He's so hungry. While I am working on this post, he is eating dinner...or I must say, midnight meal.

Friday Snaps: Black Bird

I got a snap of a black bird while I was doing my morning walk exercise in the apartment complex this morning. 'Not sure what's the name of this bird. He was walking around the tree, running on the ground, and going under the cars tweeting. It seems like he's looking for his mother or something. I was thinking he's still young because I didn't see any flying skills yet. He just walks and runs all over the area.

So Here's the Catfish Sinigang

Okay. So here's the catfish sinigang (tangy vegetable soup with catfish) that I cooked for dinner. Well, it's not bad. Of course, I used Knorr tamarind powder. The catfish tasted good along with the vegetables and tangy soup. We ate it together with steamed rice. I got the green pepper out from the sinigang and pinched a half in fish sauce. Then the few drops of fish sauce on my rice and soup added some crave to my appetite. The tangy taste, the fish sauce, and a bit of spice...it was awesome! My husband and I love sinigang but you might notice some veggies aren't there. You know, my honey is not a fan of okra, eggplant, and radish...some of the main veggies for sinigang.

Anyway, Cecile commented to my post earlier. Before I forgot I want to say she's right. Catfish in sinigang tastes good like the bangus (milkfish).

Catfish for Sinigang?

Yesterday, my husband and I were talking about cooking fish sinigang (tangy fish vegetable soup) for tonight. I told him that we don't have fish for sinigang. He said catfish will do. I was like, "Huh?". I don't think catfish will be good because in the Philippines, we are used to cooking sinigang with bangus (milkfish). And I don't think there's bangus here. He explained that June, our Filipina friend and his former officemate, tried catfish for sinigang and she said it tasted good. Oh well...since I don't have any choice, I will try to cook catfish sinigang tonight. 'Will keep you posted friends.

My version of Rice Jambalaya

Rice Jambalaya

8 ounce smoked sausage; sliced

1 cup chopped onion

1 teaspoon salt

3 dash Tabasco sauce

8 ounce tomato sauce

1½ cup rice

1½ cup chicken stock

4 small bay leaves

Directions:

  1. Melt the margarine in a large skillet over medium high heat.
  2. Add the sausage and sauté for 5 minutes.
  3. Add the onion, bay leaves, and seasonings. Cook, stirring occasionally, 8 to 10 minutes.
  4. Stir in the tomato sauce. Add the rice and cook 5 to 6 minutes.
  5. Add the stock and bring to a boil.
  6. Reduce the heat and simmer until the rice is tender, about 20 minutes. Remove bay leaves before serving.

As usual, my husband and I spent the Sunday afternoon in the kitchen. He likes to cook on Sundays. And I like to eat a lot on Sundays. So we prepared Jambalaya Rice and Chinese Stir Fry. These are surely delicious and satisfying meal. I feel hungry just looking at these pictures. Well, I still have some of them left in the fridge. I will go eat!

Aunt Mileth's Birthday

Today is Aunt Mileth's birthday. She is the wife of my mother's youngest brother. I was living with Aunt Mileth's family since I studied college, found a job, and until the day of my flight here to the USA. She is a nice woman, a caring mother to her children, and a loving wife to my uncle. Aunt Mileth is from Surigao, Philippines. I admire her for being organized in the house. She is a good cook too. When it comes to shopping for groceries and food for the house, she makes it sure that everything's inside her shopping basket though she is a budget conscious person. I miss our talks. I miss everyone there. I wish Aunt Mileth good health and many more birthdays to come.

Confused

It has been almost a year since I checked my email account from Excite . As I was browsing the page today, I saw and read my horoscope. I find it quite related to my situation right now.

Friday Snaps: Flowers

I went out to do my daily walking routine this morning. The sun is beautiful and it is really good to feel the heat of the morning sunshine on my skin. It is healthy. I enjoyed looking around, watching the trees swaying as the wind blows. It is relaxing. Then I caught some snaps of the pretty colorful blooms along side.They are splendid.

In Love and Happy

I am married for three months now and I can say that everything is doing good…so far. We just had our third month-sary last weekend. I think nothing’s change with my personality except to the fact that I am stuck now to a lifetime commitment. Though I miss my lifestyle as a single woman but I know my life is different now. I was given the chance to choose. I chose to be happy…to be happy with the love of my life. That’s why I am here with him. For me, being married is not actually complicated. Marriage will only become complicated once the couple starts to make things unreasonable to each other. That’s the time when misunderstandings and anger comes into the scene. A friend always told me, “Remember sis’, marriage is a two-way process.” And my mother is reminding me constantly to be a caring wife. Yea. Their advice will always be in heart and mind.

As far as I am concerned, we are doing well. My marriage and relationship with my husband is getting stronger as time passes by. Whenever we talked about it he would ask, “We are still the same person right?” Surely I said, “Yes we are”.

Filipina Neighbor

I am so happy because I met a Filipina in Super Target. When I was in the vegetables section looking for some ingredients for the dinner meal tonight, I already noticed that she is a Filipina. Her husband looked and smiled at me. Then after a while, she came near me and asked if I am Filipina. I said “Yes”. We started to get to know a little bit about each other. Her name is Nori and she is from Samar, Philippines-the province that is a couple of kilometers away from Leyte. Her husband is from Chicago. They've been living here in Texas for a year now.

Then they gave me a ride back to the apartment. What amazes me the most was, Nori and her husband are living in the apartment complex located at the block across the street where ours is located. Nice! Now I have a new place to hang out. We agreed to get together some time during her off from work. She is working in Super Target by the way.

Ways To Have a Safe Summer

Summer is super hot. And as hot as this time of year are accidents everywhere. Of course we do not want this to happen. But we love doing outdoor stuff. The question is how can we protect ourselves from getting the risk? Check out the ways on how we can have a SAFE and healthy summer.
  1. *When biking, always wear a helmet and bright colors. Obey the same traffic signs and signals that cars do. Ride single-file.
  2. Never swim alone. In lakes, rivers and oceans, swim in supervised areas. Always keep an eye on children around water. Most important: *DON'T DRINK.
  3. In a thunderstorm, immediately seek shelter, such as building or car. Don't take shelter under a tree, and avoid open water. If you are carrying metal items, put them down.
  4. Play outdoor sports in safe areas where there's no traffic. Wear protective gear.
  5. Drink plenty of water when working or playing outdoors. Take breaks in shade to keep from overheated.
  6. To prevent insect bites when hiking, apply an insect repellent. Avoid using perfumes and scented lotions. Wear protective clothing like long pants and long-sleeved shirts plus shoes with socks.
  7. *When boating, be sure everyone wears a personal flotation device. Don't boat in bad weather or near swimmers and water skiers.

I Want to go to Shanghai

Wow! My favorite martial arts actor, Jacky Chan, will have a museum in Shanghai, China by 2009. Awesome!

When I was still working in a travel agency in Manila, Jacky Chan’s house in Hong Kong was one of the hottest tourist spot by the Hong Kong Tourism Board. And it is one of the best selling tours at the agency. I wished that I will be able to go Hong Kong and visit his house during my stay in the company but they have this so called seniority scheme. Whatever…

Anyways, this is good news for all the fans like me especially the Chinese fans. The museum will house Jacky Chan’s props and costumes from his movies, photos and other memorabilia. This is so cool. I want to go to Shanghai. Is there somebody who’d like to sponsor me a tour?

Cleaning Up

Oh dear! It's almost two in the afternoon and I am still lazy tidying up the house. My husband just went back to work after having lunch with me. That's how it goes...feeling lazy and sleepy after eating. Then I will see myself lying on the couch watching television or playing poker online. What scares me is that I might end up the size of a barrel if this habit continues. Well, I need to move a muscle and get something done before the day ends.
So now I am preparing my sweeper and pan - my best buddies in house cleaning. It is easy for me to use these on the floors and corners while I only use the vacuum cleaner on carpets. After wiping off dusts everywhere, an anti-bacterial air freshener or diffuser completes the job.

Six Weird Things About Me

I think I need to work on this today. Let me think about what are the weird things about me. Well, you will find some of them below. Mine are kind of annoying but funny also.

1. Covering my eyes when watching scary movies - Yes, I like watching scary movies. When it comes to shocking scenes, I do cover my eyes but I keep on sneaking between my fingers. The reason why I do this is that, I don’t want to scream and get frightened. This is funny to my family and friends.
2. Keeping old notes - Because I am a very sentimental person, I value things that people are giving me. As long as it is given from the heart…no matter how big or small it is…even if it is just simple note for me.
3. I am like a ‘packrat’. – I like collecting stuff…even simple little things like movie tickets to big things like the corner lamp. I will get take it home if it has a reasonable price, and in good shape. But if it there’s a chance for me to get it free, the better.
4. I eat edible seaweeds. – Some people don’t eat seaweeds. I do. It is delicious as well as nutritious. Seaweeds, and any other sea foods, are rich in mineral Iodine which is good for our health.
5. Late to bed, late to rise – I stay up late at night because I hardly get to sleep. They said I have insomnia…maybe. I sleep late, of course, I also wake up late. But I find it nice working at night than at day time. Weird.
6. Having a hard time spelling words in writing. – I am now dependent to the computer. Letters and other forms of communication are mostly done in a Word Processor and in the internet. I seldom do some writing activities using pen and paper. That is why my hands are quite inactive when it comes to this, and when I do, I sometimes miss a letter in words I am noting. Maybe my mind is blocked in some way or something.

This is the Family's Favorite

When we were having dinner at an Italian restaurant in Richardson one Saturday evening, my husband told me to try the Chicken Marsala. It is the family's favorite.
CHICKEN MARSALA
Ingredients:

1/4 cup all-purpose flour for coating
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
4 skinless, boneless chicken breast halves - pounded 1/4 inch thick
4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
1/2 cup Marsala wine
1/4 cup cooking sherry

Directions:

1. In a shallow dish or bowl, mix together the flour, salt, pepper and oregano.
Coat chicken pieces in flour mixture.
2. In a large skillet, melt butter in oil over medium heat.
Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms.
3. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.

As one of the requirements in my application for Adjustment of Status here in the USA, I just had my biometrics taken in Fort Worth. Some people I know are asking me what is biometrics. So here's what I answered to their question.

Biometrics is the science and technology of measuring and analyzing biological data. In information technology, biometrics refers to technologies that measure and analyze human body characteristics, such as fingerprints, eye retinas and irises, voice patterns, facial patterns and hand measurements, for authentication purposes. Biometric devices, such as fingerscanners, consist of:
  • A reader or scanning device
  • Software that converts the scanned information into digital form and compares match points
  • A database that stores the biometric data for comparison

Girl Power CD

I went shopping at Victoria's Secret and I got myself the Spice Girls’ Greatest Hits CD. Since they started in the music scene over a decade ago, I already liked them. They really symbolized the true Girl Power. They are UK's most successful all-female group. Last year they have come up to a re-union concert tour and released their greatest hits CD. I still remember how they rock the entertainment world with their confident music and fabulous outfits!
The Spice Girls’ Greatest Hits CD includes my favorite songs like “Mama”, “Who Do You Think You are”, “Move Over”, “Headlines”, and others. It is quite sad that they will end their career as a group. Anyways, the CDs are exclusively available at Victoria’s Secret only.
